In a 5 gal, I would stick to smaller Crypts - I don't know if you can find C. parva, but it'd be great. Any foreground plant like pygmy chain sword, glosso, hairgrass, etc. would be great. And, I'd use stem plants for the background - they're easy to keep trimmed, where as Val or taller Crypts can't really be trimmed.

Add some Excel and ferts, and you'll have a lovely little tank. BTW, I usually use the Daylight bulbs b/c the regular CF bulbs are pretty yellow.

I have some Cryptocoryne petchii in my 5 gallon planted tank, and it is doing awesome. Or if going with lower lights you can try some Anubias barteri 'Petite', which stays pretty small. Or Hemianthus callitrichoides, riccia for higher lights. Rotala rotundifolia might do well for a stem plant, I find the leaves stay pretty small but it bushes out nicely.
