In my opinion discus do best with a sand bottom and in a well planted tank. The sand acts as a 2 function (biological and denitrator) filter and provides a natural feel for the fish.

Only thing I understood was the rift lake and cichlid info as i've not watched tv in about 10 years. But I went to the link you posted and that looks like a great station.

I have 5 gallon tank with some shrimp, a few kuhli loaches and rabbit snails, The tank is only filtered with java moss and ricca. Two weeks ago I unhooked an air stone that was on it. Today I find dozens of red/brown microscopic bugs hopping all over the surface of the water. Anyone have any idea what they could be?

They are a highly aggressive shoaling fish very closely related to the piranhas. They have huge appetites and should be feed regularly and with meaty foods. If they go unfeed they will fin nip each other and anything else in the tank.

What spieces of fish swims up and down? How do you hydro vac a 15" square undergravel filter (what's that rated for, a 3 gallon? and it's expect to filter a 55g?) 7' down and with a big rock ontop of it and plastic plants buried in the gravel? How do you get the dead fish out from the bottom of the tank? How do you scrub the algae 7' down?

I suggest an Eheim 2217 Classic or an Eheim 2226 Professional. Simply, there has never been a better quality or efficant brand of cannister filtration availible. They cost a little more to buy new, but nothing is cheaper to run. Running an Eheim will use less than half the energy of anything else; the media lasts twice as long as any other; they last 3 times longer than any other brand; no other filter biologically filters an aquarium as effiantly as an Eheim and they are made in a democratic society. They are the easiest filter to maintain and get started.Compare the intake strainer alone to everything else and that will give you a good idea of the difference in quality.
