Sand Plow Snails

Malaysian trumpet snails burrow and keep things mixed up. The nice thing about sand is you can simply use a strainer and go sifting for snails. Also assassin snails will feed on them and help get things get back in check.

+2 on that. But on occasion (once a year) you may have to poke the sand but otherwise should be okay.

In terms of infestation, yes you can get assassin snails. You don't have to though, I have none and my MTS never get out of hand. Could just be my tank though.
