I can assume since there is nitrite, that there is nitrate as well? Water changes are an order? I have a big bottle of Prime. Will that help anything? Your tank has to go through the cycle but you dont' want you fish getting hurt/killed by high ammonia/nitrite levels. Keep testing the nitrites and doing water changes to keep them as low as possible. I think I managed to get lucky in my other ones. They are fully up and running, I think I just got too excited for this one and missed a few steps. Still got some learning to do. Your fish won't starve. yes, fish can last quite an extended period of time without food. obviously it isn't good for them, but yes, maybe once every 2 days til the tank is completely cycled. hope edna is doing good.
